These anchovies are sustainably harvested off the coast of Morocco, hand-filleted, and gently cured in lemon juice and vinegar before being marinated with sunflower oil, garlic, and a touch of chili. The result is a mild, buttery anchovy with a fresh citrus finish—far more delicate than the salt-cured anchovies many people know.
